Sample Menu

Cocktail Hour

  • Coconut crusted tofu bites with green curry-delicately fried tofu squares served with a green curry dollop    
  • Pesto and avocado tarts-hand mashed avocado swirled with homemade pesto and baked in vegan tartlet shell.
  • Vegan samosa-chick pea, carrot peas and spices folded and fried. Served with a spicy chili dipping sauce
  • Vegan quesadilla- seasonal farm vegetables folded in a flour tortilla, grilled and served with a sriracha pico de gallo.

Sample Breakfast

  • Mango Lassi- traditional Indian drink made with ripe mango, yogurt and flavored with a hint of rose water. 
  • Fruit Salad-freshly cut seasonal fruit such as pineapple, melon, grapes and apple
  • Yogurt Parfait-Greek yogurt layered with a smooth fruit puree and topped with homemade granola    
  • Homemade Granola- whole grain oats, honey, nuts and fresh shaved coconut perfectly baked and made daily
  • Tofu scramble-curried crumbled tofu with turmeric and roasted peppers slowly simmered crispy and served piping hot

Sample Lunch

  • Coconut Green Curry fried eggplant with roasted chickpeas-coconut crusted and fried eggplant tossed in a smooth sauce of green curry and coconut milk
  • Spinach Salad with pine nuts, goat cheese, roasted peppers and rosemary croutons
  • Butternut Squash flavored with a hint of ginger and mint
  • Jasmine rice steamed with the essence of coconut water and fresh cilantro

Sample Dinner

  • Red curried assorted vegetable kabob- Peppers, red onion, summer Squash and other seasonal vegetables grilled and topped with a spicy red curry glaze    
  • Vegan Rice Noodle Ramen with eggplant-stewed eggplant and with cumin and coriander served over thin rice noodles
  • Kale Salad- handpicked garden kale and spinach salad with assorted dressings
  • Brown Rice-aromatic and nutty all natural brown rice
  • Vegetable Curry- assorted vegetables stewed in a green curry sauce, perfect topping to the brown rice
